Skinny Taco Salad (Healthy Recipe)

Ingredients

1 lb 96% ground beef
1 packet taco seasoning
⅔ cup water
2 heads romaine lettuce, washed and cut
9 white corn tortillas, sliced into strips or cut into small squares
1 Tbsp olive oil (optional)
Salsa Fresca (recipe here)
Avocado and cheese (optional)

Instructions

Preheat oven to 350 degrees
In a medium pan, brown ground beef over medium heat until all juices have been absorbed. About 15 minutes.
Add the taco seasoning and water. Continue cooking until most juices have been absorbed. About 4 to 5 minutes.
While the meat cooks, arrange the tortillas in a single layer on a baking sheet and bake for about 5 minutes or until crispy.
Optional: You may brush the tortillas with olive oil prior to cutting.
Assemble your salad with all ingredients and mix well until the salad is coated evenly with the salsa.
